Baking and Pastry NC 2




The day before our assessment was definitely nerve-wracking. It's a pass it or fail situation and I didn't even know how to bake soft rolls since I missed that class. So I scanned through YouTube videos and learned from them. I also made sure to prepare all ingredients before the exam and to get a good night's rest. The Tesda NC 2 for Baking and Pastry costs P400 and we had to make buttercream, sponge cake and soft rolls.  With the sponge cake we had to divide it into 3 parts. One part for the mini cake roll, petit fours and a layered cake. If ever you do plan to take an NC 2 for this skill, bring lots of decors for your cake like chocolate shavings and ganache. Our exam started at 8am and finished around 2pm. It was a whole lot of standing but it was worth it because we all passed after answering some of their questions like 

- what's the difference of butter and margarine? 
- What's the difference of cake flour, all purpose flour and bread flour? 
- How do you separate an egg? 
-What's the purpose of yeast, sugar and milk? 

those kinds of questions, no biggie..

Enchanted River in Hinatuan, Surigao



It was that time of the year again when we get to travel with my family. We decided to go to Enchanted River this time which was located in Hinatuan. A municipality 7 hrs away from Cagayan de Oro by private car. We left home at 5:30 am and arrived in Hinatuan at 12:30pm. Upon arrival, our tummies were growling from hunger so we ate at the only descent carenderia there at Kinamay. 

From Hinatuan, the travel time to enchanted river would take about 45 minutes with dusty and rocky roads leading the way. Talk about what a bumpy ride that was and when we finally arrived, there was a throng of people in the area. The place was packed, you can't even walk to entrance without a traffic of people blocking the way. It was famous alright! Even in the river there were loads of people swimming, it was somehow annoying though. There were not many colorful fishes as I though there would be but the waters were so deep and so blue. I guess that's why it's called enchanting because you will be enchanted by the clear, blue waters

The following day, we then tried out their island hopping just 2 kilometres away from enchanted river I believe the banka was 160/per hour. We took two bankas with us for a duration of 6 hours of island hopping. It was so nice but it was just so hot I got a few shades darker. We also did some caving, where we get to climb up and down muddy rocks inside the caves gazing at the stalagmites and stalactites. Struggling to reach the end of the tunnel. It felt like we were in a jurassic park film. What an adventure! The only thing that I hate was that I had to commute on my way home with my aunt since we had to go home earlier than my family because of a major event at school. It took 10 hours of bus ride from Surigao to Cagayan de Oro City. It was horrific. I was so happy when I finally arrived home but I still felt my head turning because of the long and tiring bus ride. Horrible!





Culinary Institute of Cagayan de Oro Cake Fest 2014

 

 It was a week long preparation for our cake fest. It was no easy feat, the expenses were soaring high, the time was limited and we kept having failures on making our fondant. Being a Pastry Chef wasn't how I pictured it in my head. I expected having encounter sweet smelling ingredients everyday, cool working condition, no pressure but instead I was facing the opposite. For the whole week of preparation, there was pressure, tension, stress, I wasn't able to eat lunch, my back and legs are aching from standing too long. But since it's my dream, I'm willing to work hard for it and to persevere. No work is easy anyway but I'm willing to be passionate about this. This is my dream, I won't give up that easily.




It was my first time to make a wedding cake and I didn't expect that it would be this pricey because of the ingredients and it really needs a minimum of 1 week to make this. From forming the fondant, the icing, the sugar arts and planning the motif. It was not easy especially because my cake came tumbling down and got damaged 2 days before the event. I felt so nervous, failing was not an option. Good thing, it came tumbling down before the event rather than on the day of the event itself. I'm grateful still. After much effort, my cake was restored to its former glory and was ready to see the light of day despite the damage that it experienced. This one's a fighter, just like the owner.

     3rd place which is my favorite next to my cake of course even though mine didn't win. haha.. I really love the details of this cake and the cherry blossoms, it looks so romantic and refreshing.

How I spent my 22nd Birthday

 
With almost 21 years of existence being put to bed, there's still a tingle of doubt of what the future holds. Life has no guarantees and that's the simple truth. But given the sheer number of blessings and experiences God has provided, I know I'm in good hands. I put my trust in you and with faith, one should never doubt. The future seems scary but one thing's for certain though, God always knows best and wants nothing but the best for you.
 
There were no frills or thrills. Just a simple birthday is all I need surrounded by the ones I love. Since my parents and siblings are in Davao. I just spent my birthday with my aunt, cousins and nieces and nephew and it was a day well spent indeed. We dined out and what I really love about the people I'm with is that It feels like home and there's not a day that there is no laughter. Though there are some disputes sometimes and quarrels, but that's normal. I love these people. They make me happy..

Touch and Heal Spa

Touch and Heal has got to be my favorite spa in Cagayan de Oro. I decided to get myself a post birthday treat with their Hot and Cold stone massage which lasted for 75 minutes. It was so worth it. I felt so relaxed after and I just wanted to stay there and sleep aaaahhh.. It was amazing! Like heaven. I love massages and their staffs really did a great job. Whenever I go there I would usually look for Hannah/ Melody. They're my favorite. 
If you just wanted to treat yourself, or go on a date with your friends or lover. This is a really nice place to be. By the moment I entered the vicinity, I was greeted with a smiling staff and the aroma of the essential oils coupled with their ginger tea, very relaxing music and a soothing and warm foot bath. It was such a delight! I guess they have such awesome service because their owners who train their staffs are physical therapists and has had various experiences in Langkawi, Malaysia.
Their massage was a combination of shiatsu massage plus hot and cold stones. I felt so relieved from my back pains. Plus, they also have promos during weekdays from 1-5pm. Instead of paying P395 pesos on their Hot and cold stone, you only get to pay P316 instead! SUCH A GREAT DEAL! Though it's much pricey than the normal massage but it was a special kind of massage and you'll definitely get the value of the money that you pay. The only thing I don't like there is that they don't except credit cards. humph!
