Mint Brownies for Christmas

Voila! You're all set for Christmas Noche Buena!


Ingredients:

Brownie

Ferna Brownie Premix                     500 grams                1/2 pack
Eggs, fresh                                       120 grams                 2 pcs,large
water                                                30   grams                 1/8 cup
Gold Coast Butter Oil Substitute     29 grams                   1/8 cup


Mint Filling

Cream Cheese                                   225 grams                 1 cup
sugar                                                  50 grams                   1/4 cup
egg, fresh                                           50 grams                   1 pc, med
Mint Liquid Flavor                            5 grams                     pinch
Apple green powder  color


Topping

EOI Sovereign Cake Margarine        28 grams                    2 tbsps
Light Corn syrup                               41 grams                    2 tbsps
water                                                  20 grams                    2 tbsps
Dark Chocolate Compound               30 grams                    1/4 cup
Confectioner's sugar                          143 grams                  1 cup
Vanilla liquid                                      6 grams                     1 tsp


Procedure:

1. For the brownie. Combine all ingredients together. Mix until all ingredients are well incorporated. Spread evenly onto baking pan lined with aluminum foil. Set aside.

2. For the mint filling. Mix together cream cheese and sugar. Add egg and mint flavor. Mix well.

3. Dissolve a little green powder color in water and add a few drops to the mint filling until desired color is achieved. Pour mint filling over the brownie batter. Spread evenly.

4. Bake in a preheated oven at 325 F for 30-40 minutes. Once baked, place a wire rack to cool down completely.

5. Meanwhile, prepare the topping by combining margarine, light corn syrup, water and dark chocolate compound in a sauce pan over medium heat. Stirring continuously until chocolate is dissolved. Remove from heat and stir in confectioner's sugar. Lastly, add vanilla liquid. Pour topping over cooled brownie. Allow to set for an hour at room temperature for 30 minutes inside the chiller. Cut into squares

Yield: 24 squares


Signs of the Times


What is wrong with men these days? Most men I know are committing adultery. Cheating their wives and being more unfaithful than ever. They're only thinking about making their d*c$ happy, leaving their wives and children miserable and hurt.
Just like the men that I used to work with in a restaurant in IT Park which I won't mention the name. (You can't charge me with libel if you're not sure it's you right?!) haha

Most of them men there even the owner is cheating on their wives, having love affairs with various young women. Some of the chefs there even if they already have their own children, they took no responsibility of the child and still kept on "sleeping around". Some of my co-workers had a child with one woman yet he just left her after she got pregnant and gave birth to the child and now he got another girl pregnant again. 

I really look at pity with those women and their wives, if I'm in their place and if someone would do that to me. He better make sure I will not know about it because if I find out and I'll surely find out. I'll definitely make him a eunuch! I'll cut his balls off as well!!
I look at those men with utter disgust.

There were also some men that I know who looks pretty clean cut in the outside but we don't know what they are doing behind closed doors. Having love affairs with the same sex. Sticking their thing at the wrong places as long as there's a hole. 

No wonder this country is worse than it ever was before because people are losing their souls and character. It's such crap!
But there was also one story of a woman even though her husband cheated on her and had a baby with the other woman. When this woman (who was the owner of a some-what 2.5 hotel here in Lahug) knew that her husband got another woman pregnant, she assertively wanted to take care of the child and sponsor the child's education just because she took pity of the child. It's unbelievable right?! Like I never imagined someone would actually do that. Her love is so unconditional. Apparently, this woman is actually a Christian. She and her children go to church to where I go to church which is Touchpoint at Ayala. 

She must have experienced God's unconditional and overwhelming love because of the way she poured her love towards her husband who did nothing but cheat on her. She re-payed the evil thing that her husband did with good. It's amazing! I don't know if I would be able to do something like that. What an amazing thing what God's love can do to people.

Etretat


My French mum – Chantal decided to take me to Etretat for the weekend. It was a really famous place because of their massive stone structures. It took 2 hours of traveling from Rouen to Etretat. It seemed like 2 hours since I just slept in the car because I was feeling nauseous and even vomited a couple of times whilst in the trip. I’m never fond of riding small cars, they always make me feel nauseous. I felt sorry that I wasn’t able to enjoy the sceneries because I just slept the whole time.
 



 

When we got to Etretat, it was freeking cold and rainy! It was a very windy day and I felt like I was gonna be blown away by the wind. Can you imagine there were people surfing that day.. in the freezing waters!!!! Madness!
 




We had the famous French moules for lunch. Nope, they are not the moles you see underground. But they’re like shells. It was so good! So creamy and cheesy! Too bad I wasn’t able to take a photo.

 






Looks like a scene in that movie of Kirsten Dunst called "Deeply" which really I saw when I was a child and it's etched in my memories even until now..

Mont St. Michel


Alliance Francaise de Rouen had this field trip to Mont St. Michel with the Russians and I just can’t say no. Call me crazy if I’d ever say no to a sponsored trip. We gathered at around 6am under Pont Flaubert in Rouen and when my French mum dropped me there. There was already the bus that would take us to Mont St. Michel. Wanessa tagged along as well and the Japanese girls Rina and Tomomi were supposed to come along but they thought we were going to gather at the school. Apparently, they misunderstood the instructions. Such a shame, it would have been more fun if we’re together with my classmates since the Russians were not very friendly. It’s as though we were on hostile grounds. They hardly say anything and are not quite engaging, even to their fellow Russians. They’re quite serious I guess.

The travel time took about 2 ½  hours from Rouen to Mont St. Michel. Since the bus was not able to go near Mont St. Michel, they had to park it farther away and we had to walk a few kilometres in order to ride their mini navette.

Voila! Mont St. Michel. The abbey that inspired that castle in the Lord of the Rings called Mordor. It was a very ancient abbey. It’s as though going back to the middle ages where there were monks who had hairstyles that are bald in the middle. Why did they have those kinds of hairstyles anyway? 

 It's called a tonsure btw.

Their pathways here are so small but the aura of the place was like so vintage with quaint shops and cobbled streets or more like alleys.
 


 

Honestly, we had to climb what seemed like hundreds of steps up the abbey and the tour was kinda boring because I mostly didn’t understand the French words our guide was saying. In my ears it was like “Yap yap yapity yap” I just wanted to sit and eat French food which is really so good.

We had nutella crepes for lunch and some baguettes. French style! I love it so much. The weather was also awesome. It was like being in an air-conditioned place. Back home, my armpits could have been sweating by now from the heat making me grumpy and tired. But here, It feels so comfortable.

After the tour, we called it a day and went back to our bus. By the time we arrived back at Rouen, it was already night time.
